HOW TO PREPARE MOI MOI WITH UMA LEAF - Bethy-Creative Stories


Moi moi is a Nigerian traditional food made with ground beans, spices and with either Moi moi bowl, banana leaf or uma leaf. It is commonly served at parties, wedding ceremony and other occasions. It is delicious and highly rich in protein. It is mostly served with Pap, Custard, Jollof Rice, Fried Rice etc. There are various ways of cooking Moi MOI. It can be cooked in Moi moi bowls, Uwa leaf or Aluminium foil.

Ingredients for Moi moi

* Black eyed beans or brown beans

* Fresh pepper/ Tatache pepper

* 2 cooking spoonful of vegetable oil

* 4  Ground crayfish

* 2 large onions

* Egg, smoked fish, beef, chicken or biscuit bone

* Seasoning ( Maggi, Salt and spice to taste)

* Uma leaf

* Water

How to do the Moi moi Mix

1. Soak and wash the beans to soften and remove the coat. When the entire coat has been removed, place the beans in a bowl and pour enough water to cover it. Leave it to soak for three more hours to achieve the best consistency when you blend the beans.

2. Choose your desired garnish.

3. If you choose eggs, boil the eggs and remove the shells.

4. Slice the boil eggs into small pieces and set aside.

5. Wash your tatashe pepper/pepper and set aside.

6. Set the ground crayfish aside

7. Put everything together


8. Blend the beans, tatashe, tomatoes, pepper, onions together with some water.

9. Pour the Moi moi Mix into a big bowl, add Maggi, salt and seasoning to taste.

Now, your Moi moi Mix is ready. Set it aside and get ready to wash the Uwa Leaves.

Preparation of the Uma Leaves

1. Remove the leaf stalks.

2. Wash the leaves carefully. Wash them at least two times. The first wash is with salt water and a foam sponge. This is to ensure that all the dust and dirt are removed. The second wash is basically rinsing them in plenty of water.

3. Wash the leaf stalks, they will be used as padding for the base of the pot.

How To Use The Uma Leaf

1. Mix the Nigerian Moi moi together.

2. Use the stalk of the Uma leaves to pad the base of the pot. These prevent burning of the wraps at the base of the pot.

3. Pour a small quantity of water into the pot and let it boil. The quantity of the water should be small.

4. To make Uma wraps. First of all, place two leaves on top of each other, fold them into a cone. Then bend the pointed end and hold it there. Put some Moi moi Mix into the cone. Add small fish, chicken, biscuit bone or beef.

5. Fold the open end and place the wrap in the pot of boiling water. Using two leaves avoids leakage.

6. Let it steam for about 30 to 50 minutes. Then put the pot down and shifter the water out.
